Edamame is young soybeans, usually still in the pod. Some call edamame the super vegetable because it is the only vegetable that contains all nine essential amino acids. It is full of protein, fiber, carbohydrate and low levels of fat and sugar. It is also a great source of various minerals such as calcium, iron and magnesium. Because the beans are young and green when they are picked, edamame soybeans are soft and edible and make a great healthy snack!
